The Far South isn’t the kindest place to grapes....
Why did you choose it then? – you ask.
Exactly because of this fact. – we answer.
Grapes don’t need kindness. They don’t need a hugely fertile soil either. And, to make it even more difficult for them, we don’t use systemic sprays; pest control is our Poultry Patrol and the population of local birds; don’t irrigate; and don’t fertilise, only giving some elements from Mendeleiev’s table when petiole tests indicate the necessity.
Sure they would like to be pampered...
…rewarding us with beautiful, big, green leaves, thick and tall canes, plump and plentiful bunches which would not make the wine Paul wants.
What Paul wants is Pure Far South!
Ample ripening sunshine, salty breezes from the bay, crystal water from our springs, brooding clouds touching the hills, minerals from dolomite soil and his imagination captured in a bottle.
